Recipe // Lime & white chocolate (no bake) cheesecake

A few weeks ago I made a no bake cheesecake for my birthday. I came up with the idea to combine lime and white chocolate and a bastonge cookies bottom. I looked up some recipes online and sort of combined a few to make my own. When the cheesecake came out of the fridge and on the plates it was sooo good! One of the best ones I've had, and that with only 5 steps and 6 ingredients. Therefore, I made this one again last week and I'll gladly share the recipe! 


N e e d :
- Butter 100 gr.
- Bastogne cookies (about 4/5th of the pack)
- 2 or 3 limes (to taste)
- Cream cheese 300 gr.
- Fresh cream 200 gr.
- White chocolate 200 gr.

5   S t e p s :
1. Start with the bottom of the cake: crumble the cookies, melt 90 gr. of the butter and rasp the zest of the lime. Mix this all together and place it in a springform with non-sticking baking paper. Press it to the bottom with the back of a spoon and put it in the fridge.

2. Squeeze the lime juice out of the limes and add this to the Monchou and cream. Cast aside a little bit of the cream for later (to melt the chocolate in). Mix it with a mixer or garde until the mixture is smooth and thick. Than set aside. To taste, you can add some extra lime juice if you want. 

3. Melt about 150 gr. of the white chocolate together with the leftover cream au bain marie. When it's melted add the leftover 10 gr. butter and let this melt too. Add this mixture to the other cream cheese mixture until it's smooth again. 

4. Pour the new mixture over the bottom and create a smooth top. Than set it in the fridge to let it firm up. I think a couple of hours will do, but I left it in the fridge overnight. 

5. Get the cheesecake out of the fridge, there it is, it's almost ready! Now it's time to make the cheesecake a little bit prettier. Rasp a bit more of the zest of a lime and set this aside. Melt the leftover white chocolate au bain marie again and lightly scatter the melted chocolate over the cheesecake. Than also scatter the lime rasp over the cake and add a few lime slices for a finishing touch. :)
